Ingredients:
- 3 eggs
- 1/2 cup (tea) powdered sweetener (erythritol)
- 200g sugar-free chocolate bar or dark chocolate
- 6 tablespoons coconut oil
- 3 tablespoons oat bran
- 1 cup (tea) toasted and chopped walnuts
Instructions:
- In a mixer, beat the eggs and powdered sweetener on high speed for about 5 minutes or until the mixture doubles in volume.
- Melt 100g of chocolate with the coconut oil using a double boiler or microwave on medium power for 2 minutes. Set aside the remaining chocolate.
- With the mixer on low speed, gradually add the melted chocolate mixture, then turn off the mixer.
- Gently add the oat bran, walnuts, and the remaining chopped chocolate. Mix well.
- Pour the batter into a greased and parchment-lined square baking pan (15 x 15 cm). Bake in a preheated oven at high temperature (200°C / 392°F) for about 20 minutes or until a crust forms on the surface.
- The inside should still be soft, keeping the brownie moist.
