Creamy Vegan Cassava Soup: Simple and Healthy

I love cassava soup, especially on those cold or exhausting days when only a warm, cozy dish will do.
Besides being super easy to prepare, it’s free from milk, gluten, and sugar.
This recipe is very simple, nutritious, and a great option for those with dietary restrictions.

Ingredients:

• 1kg peeled cassava
• 2 medium chopped onions
• 6 chopped garlic cloves
• Parsley and green onions to taste
• Water to cover the cassava in the pot
• Salt to taste
• Spices and peppers as you like

Instructions:

1. In a pressure cooker, place the cassava, salt, and enough water to cover.

2. Cook until the cassava is very soft (about 30 minutes).

3. Then, blend the cassava with a bit of the cooking water in a blender and set aside.

4. In the same pot, sauté the garlic and onion with a drizzle of olive oil until golden.

5. Add the blended cream to the pot and let it boil for a bit.

6. Season with turmeric, dried herbs, peppers, and salt to taste.

7. Finish with parsley and green onions on top, turn off the heat, and serve.



Additional Information:

If you want the soup to be more nutritious, just cook other vegetables along with the cassava, like carrots, parsnips, yams, or pumpkin. After blending, it will have a smooth, intuitive texture full of flavor.


If you enjoy a spicier tone, use fresh red chili peppers (remove the seeds, of course).


To add a unique flavor without the heat, use aromatic peppers, which will give your soup a wonderful flavor!


And for a prettier look and fresh taste at the end, toss in some chopped kale leaves or more fresh herbs on top.
