Ingredients:
3 medium apples (or 2 large ones)
2 eggs
2 tablespoons of coconut oil
2 tablespoons of lactose-free or coconut milk
1 dessert spoon of vanilla extract
5 tablespoons of powdered sweetener (xylitol or erythritol) or 40 drops of liquid sweetener
½ cup of gluten-free flour
1 dessert spoon of baking powder
For dusting:
3 tablespoons of powdered sweetener (erythritol or xylitol)
1 teaspoon of ground cinnamon
Instructions:
- Grease a pan with oil and sprinkle with sweetener.
- Slice the apples thinly and line the bottom of the pan.
- In a bowl, mix eggs, milk, coconut oil, sweetener, and baking powder.
- Gradually add the gluten-free flour, stirring until smooth.
- Pour the batter over the apples and spread evenly.
- Sprinkle the cinnamon and sweetener mixture on top.
- Bake in a preheated oven at 180°C (356°F) for 25 to 30 minutes.

Pan size: 24 cm (about 9.5 inches) in diameter
