Shall we get started?
Ingredients:
- 200g of sour tapioca flour
- 300g of sweet tapioca flour
- 150ml of olive oil
- 500g of potatoes
- 1/3 cup (about 80ml) of water
- 1 teaspoon of salt
- 1 tablespoon of oregano (optional)
- 1 teaspoon of turmeric (optional)
Instructions:
- Combine all the ingredients, leaving the water aside for now.
- Gradually add the water until the dough reaches a homogeneous consistency.
- Shape the dough into the size you prefer.
- Preheat the oven to 180°C (356°F) for 10 minutes.
- Place the cheese breads on a baking sheet (no need to grease) and bake for 20-25 minutes, depending on your oven.
- For a golden crust, after 20 minutes, increase the oven temperature to 210°C (410°F) and bake for another 15 minutes.
Additional Tips:
You can shape the breads and freeze them. Place them on a baking sheet, leave them in the freezer for 2 hours, then transfer them to freezer bags. When ready, bake directly from the freezer.
For a variation, instead of using 500g of potatoes, you can use half potatoes and half of another tuber such as cassava, sweet potato, carrot, or yam. This will add a different and more nutritious touch to your recipe.
For an extra special flavor, you can add herbs like thyme or basil to the dough.
The breads can be shaped in different sizes, like small balls for snacks or larger ones for breakfast.
Culinary Secrets:
Don’t rush when adding water to the dough; this ensures a lighter, fluffier texture.
If the dough becomes too sticky, add a bit more sweet tapioca flour until it firms up.
