Ingredients:
1 cup (200g) of fresh corn
4 eggs
2 teaspoons of extra virgin coconut oil
2 cups (400g) of sugar
4 cups (960ml) of lactose-free whole milk
1⅓ cups (170g) of fine cornmeal
4 teaspoons of sifted cornstarch
3 teaspoons of baking powder
100g of shredded coconut
Instructions:
Blend the corn, eggs, coconut oil, sugar, milk, and cornstarch in a blender until smooth.
Add the cornmeal and shredded coconut, blending for a few more seconds.
Turn off the blender, add the baking powder, and mix well.
Transfer the batter to a greased pan and bake in a preheated oven at 180°C (356°F) for 35 minutes or until golden.
Do not open the oven before 35 minutes.
Perform the toothpick or fork test to check if it’s ready. If the toothpick or fork comes out clean, the cake is ready.
Once baked, remove from the oven and let it cool before unmolding.
Additional Tips:
Use a round pan that is 20 to 30 cm in diameter.
For an even more special touch, you can add fillings like guava paste or even a layer of unsweetened coconut cream.
