Ingredients:
- 2 eggs
- 3 tablespoons of cooked and mashed cassava
- 2 teaspoons of apple cider vinegar
- 1 teaspoon of salt
- 1 level tablespoon of sugar
- ½ cup of oil
- ½ cup of water
- 1 cup of regular rice flour
- 1 tablespoon of dry active yeast (for bread)
- 1 teaspoon of baking powder
Instructions:
- In a blender, blend the liquid ingredients (eggs, oil, water, and vinegar).
- Add the cooked and mashed cassava and blend well.
- Add the rice flour and the dry yeast, blending until the batter is smooth.
- Turn off the blender, add the baking powder, and stir with a spoon.
- Transfer the batter to a greased baking pan and let it rest for 20 minutes to rise.
- Preheat the oven at the lowest temperature for 15 minutes.
- Raise the oven temperature to 180°C (356°F) and bake for 30 minutes or until golden.
